BABY… I genuinely think this might be one of the best homemade vegan quesadillas I’ve ever made. 😭

I’ve been experimenting more in the kitchen lately and after trying the Juicy Marbles filet, I already knew I wanted to create something quick, flavorful, comforting, and EASY. That’s how TLW’s Fajita Steak Quesadilla was born.

The texture on this steak??? Actually insane.

Once it started crisping up in the pan, I literally had a moment because visually alone… it looked unreal. The flavor got even better once I added the peppers and seasoning into the mix.

And if you know me, then you already know my rule:

double peppers = double the flavor 🌶️🔥

What I Used

  • Juicy Marbles Filet

  • Tortillas

  • Vegan cheese

  • Red bell peppers

  • Jalapeños

  • Your favorite seasonings

  • Vegan sour cream

  • Spanish rice

  • Chips + salsa

How I Made It

First, I cooked the Juicy Marbles filet on both sides for about 8 to 10 minutes until it started getting crispy. Personally, I LOVE texture in a quesadilla, so getting that golden crisp on the outside was important for me.

After that, I added chopped red bell peppers and jalapeños into the pan because honestly… the peppers take this to another level.

I added extra seasoning to taste along with a splash of water and let everything sizzle together for another few minutes so all the flavors could blend together perfectly.

Then came the best part 😭

I layered vegan cheese first, added the fajita steak mixture, then added MORE cheese on top because we are not being stingy over here.

One thing about me? I love baking my quesadillas instead of frying them because the oven gives them that crispy golden texture I’m obsessed with.

I baked the quesadilla at 400 degrees for about 12 to 15 minutes, flipping it halfway through so both sides could get crispy and perfect.

I served everything with Spanish rice, chips, salsa, and vegan sour cream and BABY… this meal disappeared QUICK. 😭🔥

Final Thoughts

I completely understand why so many people love Juicy Marbles now. The texture, flavor, and versatility really surprised me and this recipe ended up becoming one of my favorite homemade vegan meals I’ve made in a long time.
